Technical Information
This Late Pick Sauvignon Blanc was allowed to hang longer on the vine to accumulate more natural sugar. The grapes were hand-picked and whole bunch pressed. Fermentation was stopped with some residual sugar remaining.
The 2018 Vintage season had average winter and spring rain, then a wet January (twice average) that required strict disease control. February was dry and, through to the end of vintage, had perfect sunny weather (no sunburn issues).
