2019 Pinot Noir
A fresh modern Pinot Noir is grown and produced at Rowanston in Macedon Ranges. This delicate and fragrant Pinot Noir has lovely fresh strawberry and cherry flavours with undertones of earthiness and spice adding complexity.
The Pinot Noir is crushed and de-stemmed with approximately 20% whole bunch in the mix (amount vary according to ripeness). Primary fermentation and Malo-Lactic fermentation occur simultaneously in an open fermenter. The process takes up to 10 days including cold soaking before being hand-pressed in a basket press. The wine is settled in a tank before placement into a mix of aged and new French oak and matures over about 16-months prior to bottling.
